They say that breakfast is the most important meal of the day. I’ve never been a morning person, so I may beg to differ…at least until I’ve had my coffee.
However, this is one of my family’s favorite breakfast meals and the kiddos even like to make it since it’s so simple, which makes a coffee chugging momma even happier.
We often have bags of frozen, already cooked sausage in our freezer. This makes this recipe even easier, but cooking fresh sausage doesn’t take much time and effort at all.
What you’ll need:
9x13 cake pan
Stick butter or spray oil
Bag of frozen tater tots (I like using the hash rounds myself)
1 pound cooked & crumbled breakfast sausage (try a hot style sausage for a little kick)
2 cups milk
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt & Pepper to taste (I use about a teaspoon or a little more of each)
How to get your cooking on:
Grease you cake pan with either stick butter or spray oil. We like using butter.
In a large bowl mix your cheese, frozen tater tots and your cooked sausage (if using frozen cooked sausage, make sure it thaw it out before using)
In a small bowl mix all other ingredients (like your making scrambled eggs)
Pour the bowl of cheese, tater tots, and sausage into your cake pan and spread it out as even as you can
Pour the egg mixture all over the top of the tater tot mixture
Bake in a 350 degree oven for about 45 minutes, but star checking it about 40 minutes in since ovens do vary. Mine usually takes about 51 minutes.
This is a crowd pleaser and if you have any left overs, it does reheat well.
Variations to the above – I like adding some veggies in on occasion, as long as I don’ tell my family I’m doing it. Try adding mushrooms, onions, and colorful bell peppers that have been sautéed into the tater tot mixture before pouring the egg mixture on top.
