I love getting to use my crockpot for meals, mostly because it means I don’t have to cook after a busy day and I get to spend more time with my family. Not to mention that yummy smell that hits you when you open the front door.
This meal is super easy, filling, and can easily be switched out from canned green beans to fresh ones.
I use an 8-quart crockpot and the ingredients below are based on that. This can easily be scaled up or down; depending on how much you want to make.
What you’ll need:
3 cans of green beans (2 cans drained and 1 with juice. If you’re using fresh green beans, you can add in about a cup of water or chicken broth)
6 russet potatoes cut up in large pieces and rinsed
Country ham (I buy the packages that are already cut up for this recipe)
1 stick of butter
1 large or 2 small onions (I like plain old white ones)
Salt and Pepper
How to get your cooking on:
Lightly spray the crock with oil
Put in potatoes and use salt & pepper on top of them
Put in onions
Put in green beans and use a little more salt & pepper
Put in country ham
Put the stick of butter on top (I cut mine into 3 or 4 pieces and place them around the top)
Put the lid on and let it cook on low for 8-9 hours
You’ll know it’s done when the potatoes are cooked through
