Fried Potatoes and Okra

This was one of my favorite things that my grandmother used to make and I can still sweet talk my momma into making it from time to time. When I asked her for the recipe I got the typical momma cooking answer – “there’s no real recipe”.

After begging her to give me at least an idea for a starting point, this is what I was given.

Most folks would probably not understand the greatness in this simple fried up dish, but aside from being super yummy it always makes my heart smile when I have it.

What you’ll need:

Okra – fresh is best, but you can also use frozen
Self-rising meal about ¼ cup*
Self-rising flour about ¼ cup*
Salt & Pepper
Russet potatoes
A gallon storage/freezer bag
Oil for frying
Large cast iron skillet (personal preference)

How to get your cooking on:

Cut up your potatoes in bite size pieces, season with salt and pepper and start those frying in your skillet
Cut up okra, in round slices about ¼ to ½ inch thick
Mix flour and meal together in the gallon bag and add salt and pepper
Add okra to your bag and shake until the okra is completely coved with the batter
Once potatoes are about half way done, add in your okra and stir all together
Continue frying until the okra is done, best if you don’t over stir

*The amounts of flour and meal that you will use will greatly depend on how much okra you are going to fry up. I would start with the above measurements and then add more if needed.
