Cast Iron Steak

When the hubby and I first got married, we lived in a cute little townhome that didn’t allow us to have grills. Needless to say, this girl wasn’t happy not being able to have grilled food when the mood or taste struck. Why, I’ve been known to grill in the dead of winter when there was snow spread all around just because I had a craving for a grilled hotdog.

So, as always when you’re faced with a problem of any size you start looking for a solution. How silly did I feel when I was talking to my mom about my dilemma one day and she asked why I didn’t just use one of my cast iron skillets in the oven. I can honestly say that I slapped my hand against my forehead for not thinking of that sooner.

After several attempts of steaks ranging from not even edible to half way edible, I finally got a rhythm going. I now prefer cooking steak at home than going out to eat it!

*I can’t stress enough how hot this skillet will be, please be careful*

What you’ll need:

Cast iron skillet
Steak(s) of choice – I like the ribeye steak because of the wonderful marbling of fat on there. I also like to let my steaks come to room temperature before cooking.
Olive oil
Seasoning of your choice – I like to use the 21 seasoning blend that Trader Joe’s carries. I make a special trip all the way down there a couple of times a year just for this seasoning.

How to get your cooking on:

Place your skillet in the cold oven
Preheat your oven to 500 degrees
While oven is preheating, prepare your steaks
Season each side with olive oil, salt, and any other seasonings
When oven has preheated, remove skillet and place on top of the stove. Heat the skillet over medium high heat for 5 minutes.
Place steak in skillet and sear on each side for about 1 minute
Leaving the steak(s) in the skillet, place back in oven

The next steps will depend on how you like your steak cooked. We like a medium to medium well.

Let steak cook in the oven for 3 minutes, remove skillet from oven and flip the steaks, then return to oven
Cook for another 4 minutes
Remove skillet from the oven and remove steaks from the skillet
Let steaks rest for 5-7 minutes before serving
