White Chicken Chili

When it comes to cooking, I like to think of myself as someone willing to try almost anything once. However, there are always those dishes that, at least in my mind, don’t need anything done to them.

Chili is one of those dishes and while everyone has their own variation, at the heart of this yummy goodness the basics are usually the same.

So, when a girlfriend at work gave me her recipe for White Chicken Chili I sure was skeptical.

I took the recipe and gushed over how good it sounded, all the while thinking that I’ll probably never make it. Then said girlfriend made a pot and brought it to work one day. Knock my socks off, but it was really good. So good in fact, that I wanted to share it with you guys.

Now, this recipe makes one batch. I always at least double it, but usually end up tripling it for our family.

What you’ll need:

1 can of Black Beans (drained and rinsed)
1 can of Corn (do not drain)
1 can of Rotel (do not drain)
1 packet of Ranch Dressing Mix
1 tsp Cumin
1 TBS Chili Powder
1 tsp Onion Powder
1 8oz package of Cream Cheese
2 Chicken Breasts

How to get your cookin’ on:

Place chicken at the bottom of the crock pot
Pour onto chicken, the corn, black beans, and Rotel
Top with all of your seasonings and Ranch mix
Stir together
Place cream cheese on top
Cover with lid and cook on low for 6-8 hours (making sure your chicken is completely done)
Stir cream cheese into chili
Use 2 forks to shred the chicken
Stir together again
Serve & enjoy!
