Pinch & Dash

This is one of those recipes that has been passed around from friend to friend and it happens to be one of my favorite chili recipes yet. This is a thick hearty chili that will warm you down to your bones and stick to your ribs. Since this is mostly done in the crockpot, you can put it on low and then come home from a day of work, errands, sports, etc. and have a yummy meal ready to go.

Want to make this even quicker to throw together? You can cook your hamburger meat the night before or if you’re like me, you can keep bags of cooked hamburger meat in your freezer. I also like to mix the seasonings together in a container the night before so I can just dump and go the next morning/day.

This recipe easily feeds 4, but I usually double the batch for my crew.

What you’ll need:

4 tablespoons of chili powder
2 ½ teaspoons of ground coriander
2 ½ teaspoons of ground cumin
1 ½ teaspoons of garlic powder
1 teaspoon oregano
1 tablespoon of minced onion
½ teaspoon of cayenne pepper or red pepper flakes *feel free to add more for a kick
2 pounds of hamburger meat, cooked and drained *try using ground turkey if you’re not a fan of beef
1 28 ounce can of diced tomatoes
1 15 ounce can of tomato sauce *I usually use 2 8 ounce cans
2 can of kidney beans
1 can of refried beans

How to get your cooking on:

This is the best part. You literally pour everything into your crockpot, give it a stir, cover with the lid, and cook on low. I try to let mine cook at least 6 hours, but it’s been as long as 10 hours before and is still just fine.
