Crockpot Baby Carrots

This recipe can be easily be scaled up or down, depending on the number of people you’re serving. It’s great for potlucks or for enjoying at home. It’s a side that’s in regular rotation at my house since it’s one of the few vegetable sides that I can get my family to eat without any issues.

What you’ll need:

Medium crockpot
2 packages of baby carrots, washed
1 stick of salted butter
2 tablespoons of honey
Salt & pepper

How to get your cooking on:

Lightly oil the inside of your crockpot just to prevent sticking
Add carrots
Drizzle in honey
Add salt & pepper to taste
Add stick of butter on top
Cook on low for 3-4 hours, depending on how well done you like your carrots

Don’t be intimidated by the honey. It doesn’t overpower the dish with sweetness, it just gives it a nice subtle sweetness that adds to the carrot flavor. A friend of mine likes to add a handful of chopped pecans to her dish towards the end of cooking, but I prefer mine just as is.
