Pinto Beans with Smoked Sausage

One of my favorite uncles never cared from pinto beans, saying they tasted like a wet diaper. How he knew what one of those tasted like, I’ll never know. However, he quickly changed his mind one day when he stopped by the house to help my husband finish remodeling my new pantry. I had decided to add smoked sausage to the beans since I was out of my usual bean seasoning meat. Turns out to be one of my favorite changes, thanks to Uncle Seth. He ended up eating 2 whole bowls of the mixture, thinking it was a stew. I didn’t have the heart to tell him at the time what he was eating. Of course, now he knows and he’ll tell anybody that he’ll only ever eat my beans.

What you’ll need:

Large crockpot
Bag of pinto beans, washed and soaked
Beef stock
1 small onion, chopped
1 ring of smoked sausage, cut in pieces
Hot water, as needed
Salt & Pepper

How to get your cooking on:

Add beans, stock, onion and salt & pepper to crockpot.
Add desired amount of water, depending on how thick you like your bean soup
About 2 hours prior to beans being down, add in smoked sausage

When ready to serve, have fresh cornbread and some chow chow on hand.
