Roman Chester Cake (Contributed By: Robert W Nance)

Pastry Ingredients for Chester Cake:

1 1/2 cups Self-Rising flour
Pinch of salt
2 tablespoons sugar
4 tablespoons butter
1 egg
2 tablespoons cold water

Method for pastry:

Put all the ingredients into the bowl of a food processor
When the pastry comes together, stop processing
Halve the dough and roll it out to fit the base and top of a square cake tin.

Cake Ingredients for Chester Cake:

2 cups of cake crumbled
1/2 cup milk
1 tablespoon apricot jam
1/2 cup sugar
1 tablespoon mixed spice
1/2 tablespoon nutmeg
1 cup mixed fruit
1 tablespoon rum or Madeira

Method:

Soak the cake in the milk
Add the other ingredients and mix well
If the mixture seems too wet, add a little self-rising flour
Pour onto the pastry base
Cover with the second layer of pastry
Bake in a moderate oven 350F until the pastry is golden brown
Cool in the tin
Top with icing colored with a little red food coloring
Cut into squares to serve.
