Old English Blueberry Tarts (Contributed by: Robert W Nance)


I was sitting at the buffet in Vegas today and saw Blueberry Topless Tarts on the dessert table. I thought, “apart from the antioxidants in the blueberries, those are kind of healthy.” Then it dawned on me that they would make a great addition to the Pinch & Dash section of OneStopCountry.

3/4 white sugar
3 Tablespoons of cornstarch
1 pinch of salt ( sea salt healthier)
1 cup of water
4 cups of Blue Berries
1 tablespoon of butter
1 pie crust large or 12 small pie trust cups ( ready made or make your own pie crust)

In a saucepan, combine sugar, cornstarch and salt. Stir in water and 1 cup of blueberries. Cook and stir over medium heat, until thick, approximately 8 to 10 minutes
Add butter and let cool about 5 minutes. Stir in remaining blue berries.
Pour into baked pie shell and cool in the refrigerator for 2 to 4 hours.
if you don’t like Blue Berries, you can also use strawberries.
